BBQ Cauliflower Sweet Corn Tacos (Printable)

# What You'll Need:

→ BBQ Cauliflower

01 - 1 medium head cauliflower, cut into bite-sized florets
02 - 2 tablespoons olive oil

06 - 1/4 teaspoon salt
07 - 1/4 teaspoon black pepper
08 - 1/2 cup BBQ sauce (vegan if desired)

# How To Make:

01 - Preheat oven to 425°F and line a baking sheet with parchment paper.
02 - In a large mixing bowl, toss cauliflower florets with olive oil, smoked paprika, garlic powder, ground cumin, salt, and black pepper. Arrange evenly on the prepared baking sheet.
03 - Roast cauliflower for 20 minutes, stirring halfway. Remove from oven, toss florets with BBQ sauce, and return to bake for an additional 5 minutes until tender and caramelized.
04 - Heat 1 teaspoon olive oil in a skillet over medium-high. Add sweet corn, season with a pinch of salt and black pepper, and sauté for 3 to 4 minutes until lightly charred. Set aside.
05 - In a bowl, combine red cabbage, green cabbage, julienned carrot, lime juice, olive oil, and salt. Toss well until evenly coated.
