# How To Make:

- Bring a saucepan of water to a boil. Add tomatillos and jalapeño; simmer 5 minutes until tomatillos turn olive green and tender. Drain and cool slightly.
- Combine tomatillos, jalapeño, cilantro, white onion, garlic, lime juice, and salt in a blender. Blend until smooth. Adjust seasoning and refrigerate until ready to serve.
- Heat olive oil in a large skillet over medium heat. Add onion and cook 2-3 minutes until softened. Add garlic and cook 30 seconds until fragrant.
- Add ground beef to the skillet. Cook, breaking apart with a spoon, until browned and cooked through, 5-7 minutes. Drain excess fat if needed.
- Stir in tomato paste, cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Cook 2 minutes, stirring constantly. Remove from heat.
- Heat tortillas in a dry skillet or microwave until warm and pliable.
- Spoon seasoned beef into each tortilla. Top with lettuce, diced tomatoes, red onion, cheese if using, and generous spoonfuls of salsa verde. Serve with lime wedges.
