# How To Make:

- Cook brown rice or quinoa according to package directions. Set aside until ready to assemble.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, half the chili powder, cumin, and paprika. Sear for 4 to 5 minutes per side until internal temperature reaches 165°F. Remove from skillet and let rest for 5 minutes before slicing or shredding.
- In the same skillet, add remaining olive oil. Sauté onion and garlic for 2 minutes until fragrant. Add bell pepper, roasted green chiles, and corn; cook for 3 to 4 minutes until vegetables begin to soften.
- Return sliced chicken to the pan. Stir in remaining spices and oregano. Add cherry tomatoes and spinach, cooking just until spinach wilts, about 1 to 2 minutes.
- Divide cooked rice or quinoa among 4 serving bowls. Top each bowl with the chicken and vegetable mixture, distributing evenly.
- Sprinkle with shredded Monterey Jack cheese, fresh cilantro, and arrange avocado slices on top. Add a dollop of sour cream or Greek yogurt if desired. Serve with lime wedges on the side.
