# What You'll Need:

# How To Make:

01 - In a large pot, heat a drizzle of oil over medium heat. Add the diced onion, minced garlic, diced bell pepper, and minced jalapeño. Sauté for 4 to 5 minutes until the vegetables have softened and become fragrant.
02 - Stir in the diced tomatoes, corn, ground cumin, smoked paprika, chili powder, salt, black pepper, and cayenne pepper if using. Cook for 2 minutes, allowing the tomatoes to begin breaking down and the spices to bloom.
03 - Add the chicken breasts and chicken broth to the pot. Bring to a gentle boil, then reduce the heat to a simmer. Cover and cook for 18 to 20 minutes, or until the chicken is fully cooked through.
04 - Remove the chicken breasts from the pot and shred the meat using two forks. Return the shredded chicken to the soup.
